Example of the binding I'm using for my book. I didn't put a cover on it because I hadn't designed it yet XD
Basically, I print out my stuff, cut the pages, and fold them in the center. I then tape the pages together, back to back. The paper I print on is strathmore 300 bristol paper, the same stuff I use for my pencil drawings.

i think it's going to take you a while to do each copy by hand though...
have you thought about mass producing them? it would be cheaper and less time consuming.
